I’m ever so glad our self-appointed “nannies” have wasted countless tax dollars to “sting” a functional small business filling a public demand. And, true to government form, the prosecution trots out laws/regs formulated 7+ decade’s ago responding to conditions even older in support of its position. Never mind the quantum improvements in collection, storage, processing and transportation effected in the intervening seven decades.

Back when the diary “regs/health concerns” cited were formulated refrigeration was a spring house. Milking was done by hand into open pails and the product was transferred in open buckets - all exposed to flies and barn debris - to cans indiferently washed, let alone sanitized.....

Contrast that with modern milking where milk is pipelined directly from teat to refrigerated tank under agitation to ensure even/rapid cooling to temperatures deterring bacterial growth.

Milk - from human, goat or cows - is a living organism containing its own digestive enzymes and bacterial cultures. “Healthful” processing not only destroys “bad” bacteria, but the good ones as well. Yogurt and cheese are seen as “health foods”, yet they can’t be made from processed milk. They require the “raw product”, replete with natural bacteria, or such must be added prior to processing.

And here’s another bit of modern folklore worth consideration. “Homogenized” milk - milk with the fats broken down into such small globules they can’t seperate - also means those fats are small enough to be directly absorbed into the bloodstream rather than be digested by the bile and bacteria natural to the human gut. Could that be where arterial plaque comes from ? >PS
