Good evening Drumbo & so glad to see your honoring Dave Brubeck this evening. *Hugs*

I finally canned butter last night! WooHoo!:)

It was sooo easy but a bit time consumming. I think it turned out well. All my jars ‘ticked’!

I wonder what the shelf life is....

In a cool, dark pantry, canned clarified butter (ghee) should last 10 years or more. I know some preppers at my Survival Monkey forums (where I learned the technique) who strain it thru cheesecloth to remove absolutely every milk solid and they say they’ve kept it 20 years with no degradation. I’m not that meticulous and just ladle mine from the pot into the jars.

I canned 8 more pounds of butter on Wednesday and now have enough to last well past Armageddon, lol. Compared to the price of the tiny cans of butter on the supermarket shelf, I’m rich in golden goodness for when the refrigeration fails! I used my “skimmin’s” to top a casserole of baked mashed potatoes with cream cheese and sour cream and it’s golden brown. That stuff is ambrosia and freezes well.
