Here’s the easy way to look at it. If trayvon was on top of george when George fired, blood would have dripped onto George’s jacket. Is there blood?

Not likely since TM had a cotton tee shirt on which would have caught the blood long enough for the position changes described.
1. Witness says TM was on top just prior to shot.
2. Expert forensic witness says condition of tee shirt indicates TM was on top.
No evidence was presented that contradicts those two pieces of testimony.
Most gunshot wounds do not bleed immediately. It takes a few seconds for the blood to flow from and injury. Have you ever cut yourself deeply? There is a good 5 to 10 seconds before the cut begins to bleed. Gunshots to the chest even more so because the chest cavity has to fill with blood before the it is forced from the bullet hole.
When Ronald Reagan was shot he did not bleed extrnally at all for several minutes. So your assumption of blood on George is wrong. Due to two sweat shirts being worn there would not even be blood splatter from the initial impact.
Actually, that is a questionable argument. There were two layers of clothes over the gunshot wound that absorbed most of the blood in the few seconds between the gunshot and when Zimmerman got out from under Martin. So it would not be surprising to find no blood on Zimmerman's jacket. That being said, I think the did find a drop or 2 of Martin's blood on Zimmerman's jacket.
I'm no doctor but I read in this or another thread (they are all running together now!) that when the bullet hit TM's heart, his blood pressure would drop and blood would not spurt out and he wouldn't bleed out. The blood would stay mostly in his body - it this is true, that would explain why Zimmerman wasn't soaked in TM's blood.
The poster said that what little blood would escape his body would likely be inside TM's shirt and hoodie.
