I suspect this is more about cheaper ingredients and higher profits than saving the fuzzy nosed three teated artic suckerfish or whatever from boiling in mid-ocean. In free markets, cheaper is the most honest indicator of how much total energy was consumed and therefore pollution created in production and distribution. Cheaper is usually greener, although cheaper might not be something you want pumping through your non-renewable blood veins.
Ikea probably does not make any money off their food court. They use it as a food reward to train you like a monkey. That's why these stores always put their monkey chow at the end.
