I make a good eggplant chutney - the eggplant from my garden. It's a mix of vegetables along with ginger, brown sugar, vinegar, cumin, etc. Can also go another way and use it for caponata or ratatouille.

This week’s soup: yellow split pea soup with ham.

I should have soaked the peas first, but everything I read said there was no need. I started it on Sunday, and the peas are just now getting tender.

But, it sure is good.

Next time, I will soak the peas, then put them innthe blender tomake a paste. Biting down on a hard pea is like chomping on a popcorn old maid.

Balance is everything in chutney. A little sweet, little sour. Of course, if you don’t like it, you can leave it out. It’s a relaxing dish to make and very easy, too.

Probably mango (Major Grey) chutney. Yeah, the bottled stuff probably does err on the side of sweet. I beef up the ginger, myself.
