So, does that mean schools with culinary classes can't use knives? I think I saw that trick on Cutthroat Kitchen. It wasn't pretty.

My school did. As long as they stayed in the kitchen or culinary classroom/ dining room no one cared. They were nEver locked, just left in the knife rack. Not sure if it has chanced since I graduated though.

I taught H.S. shop for a few years. The woodworking shop in particular was loaded with "weapons". Fortunately, the students learned how to keep all the cutting tools very sharp -- so that they weren't dangerous.

Seriously, it never occurred to anyone that these tools would be used as weapons.
