Years ago when I was in the seafood biz, I flew to Port Lavaca Texas to hook up with a load of flash frozen Saudi head-on shrimp which we'd had shipped there for tailing and size-grading.
Those Texans marveled at the freshness and quality, compared to the gulf stuff.
