That and now I’m hearing “Climate Extremes” as a means to cover all the bases.

It won't cover spells of near-average temperatures but I'm sure they come up for some scary term for that too.
Maybe we'll hear "Climate Stagnation" which would suggest that the climate is in fact supposed to change.
