The flesh can suffer on the really huge ones, but for the most part, it doesn’t make a whole lot of difference.
Sometimes they will get infested with Hagfish, though, and when pulled out of the water, they are basically gelatinous just waiting for a place to fall apart.
I just googled hagfish. Ugh. Probably wouldn’t even make good bait as fish probably dread and avoid them.
