Why are these Europeans so enamoured of Palestinians. They were sympathetic, while they were bombing Israel. Does anyone know what is going on on the ground level there that the Palestinians are the victims?

Beats me.
I suspect it's the European Media that are pushing it, and just as the Arab nations, they don't really care one iota for the Palestinians.
They are against Israel and they use whatever is handy for propaganda against Israel.

If Israel should ever be wiped out, that will be a very dark day for Palestinians. No liberation whatsoever.
Not only would the Palestinians have lost their main employers, source of income, food, health care and amenities, they would find out the hard way they lost all usefulness for Israels former enemies and no one would give a damn anymore.
