NM Mex is different from TexMex we can agree, but better no agree. NMMex seems to have more Indian influence, good for an occasion, but not as a staple.

“Real” Mex in Mexico was never like TexMex or NMMex.

Happy you didn’t try to throw CalMex into this ‘good mex mix’.

You have several flavors in CA.

Mexican food in Mexico, is pretty bland. NM & CO Mexican food is better flavored and not super hot, but warm.

TexMex is all over the board. I don’t like some of it because of so much cayenne pepper used. Chili’s are much better choice.
