‘cheese curds.’

French fries and cottage cheese smothered in gravy?

Or some other kind of cheese?

I confess, this Canadian staple is starting to sound more interesting. Guess it never caught on in the States?

It’s not cottage cheese, it’s a sort of raw, squeaky cheese in chunks, spread over french fries and the whole thing doused in gravy. I’ve often thought it was something cooked up by drunks from what they had on hand. It’s popular diner food up there. One of those things you’d have to grow up with to like, I guess. Every place seems to have something like that.

No not cottage cheese, I think they may originate from cheddar,I think they are collected from the initial cheese processing , cooked and slightly aged. They are kind of like squeaky when you chew them.poutine has kind of become a trendy thing in some US restaurants, but dressed up. The last time I had them,it was lobster poutine,lobster meat, sort of bernaise sauce,and fries.
