I eat either. Will buy one for month and then just get a whim for the other. What mom made was very large curds. We had our own cows so iirc she used whole milk with out the cream separated.

Just found a recipe for homemade provolone like they make at the upscale deli. We have dairies close but there are now laws against them selling raw milk.

She broke up the curd to make smaller with her small meat fork.

Funny how little memories just pop up, when one starts the flow.
