Faced with a sandwich cookie, the proper drill is to separate the cookies from the filling so that the filling lies on one of the cookies. Then devour the bare cookie. Then do the same to the next cookie. Then place the filling loaded cookies together to make a double-stuffed, and enjoy.
Buying factory made "double-stuffed" is to be avoided at all costs! No self-respecting aficionado of sandwich cookies would fall for that ploy!
