I’ve never done a dry brine. But wet or dry, the principle is the same - to move the water deep into the meat to keep it moist.

We had 8 years of a Turkey and his ‘family’. So...oh, you meant Turkey the bird...no thanks getting game hens for our Thanksgiving dinner...
