>>> My apologies if I’ve offended your personal beliefs

Not sure why you said this.
I really don’t offend easily... even when that is what is intended.

>>> but things DO have to make ‘sense’ to me.

If things have to make sense to you in order for them to be true, then logically you must be on equal footing with God when it comes to knowledge.

Likewise, if the only things which are true must be understandable by men, then God is a man.

God gave us the ability to reason so that we could “test all things” as He commanded.

He makes it very clear in His Word that the flesh of man and of birds and of animals is “different” flesh.

I think we may disagree somewhat.

I think that the point of our sojourn on Earth is to set us upon the path of learning what God knows, through experience which leads to the ultimate wisdom of Love.

He loves us - His Sons - to the extent that He wants to bring us up into His understanding and realm - as any father would want for his child. But He understood that we would need a ‘school’.

I don’t think that God really cares which ‘scripture’ or ‘organization’ we follow - whether we go to church on Sunday - shul on Saturday - or even if we are frail, and sin now and then -

as long as we find our way to Him, and to His way of Love.

(Jesus was pretty clear about Love for God and fellow man: “law and prophets”, and all of that. These are more important than pedantry.)
