I'm not a seafood lover - prefer chicken gumbo to any of it, but I did eat some of the other stuff while there - made Shrimp Sauce Piquante a few times. The 'natives' made gumbo out of EVERYTHING! Redbird, blackbird, duck - everything! LOL

But, since I make it, I know what is in it. Chicken, fish and shrimp are fine and dandy for me.
