"My final course was at the stall serving goat head. I just had to try. They would take entire heads (minus the brains) and boil them. Then, they would cleave the head in half with a giant cleaver, and pick out all the bone fragments. What was left was chopped up and served with cumin. I know you probably won't believe me on this one, but it really wasn't bad."
