So, based on this and the fact we know of John’s father’s responsibilities within the Hebrew order, why don’t you, personally, believe December 25 is not plausible?

Plausible? There are "plausible" arguments and counter-arguments for all of the various proposed dates. I, personally, think that knowing the exact date of His birth is just not that important. I don't see how it makes a difference.
I love the Lord and believe all that is written of him in the Gospels. And I'd be just as happy if He were born on Cinco de Mayo or the the Fourth of July.
Because I observe the sky.. September 26 in 2014 (the true Rosh Hashanah-1st day of 7th month) had the sign of the woman clothed with the sun and the moon under her feet. A literal event in the sky.
In 2015, it occurred on October 14. That represented the 1st day of 8th month). An extra month this year on the luni-solar set up.
It will be back at Rosh Hashanah in 2016.
