There's another principle at work here everyone is ignoring.
EXPECTATION.
I like both ham and pineapple.
Once at a wedding I had a plate of food with both.
While I was talking I wasn't looking down as I stabbed the plate for what I thought would be a piece of ham.
Instead I picked up a piece of pineapple.
My mind was expecting ham and when I bit into it, I gagged and spit out the pineapple.
My expectation that I would taste ham and instead tasted pineapple caused me to gag.
If this person had agreed to try the mayo the person would have been emotionally and physiologically ready for a reaction.
That it was not expected was a shock.
I can see how this happening to anyone would turn them off of any kind of food.
We agree. Mustard is the new mayo for me!
Home made mayo is spectacular.
I will eat just tomatoes on toast with mayo - lots of salt and pepper - all Summer. Best lunch ever.
When I make roast beast sandwiches for the hubby I do a layer of mayo & then spread prepared horseradish over the mayo. A little salt & pepper on that.
i do not eat salad dressing either, and i get it at restaurants 90% of the time.

There have been studies done. Fussy eaters have more/more sensitive taste buds.
Little kids have a ton of living, sensitive taste buds.
It seems that eating hot (temperature, not spicy) foods can damage or kill your taste buds. As the damage over time adds up, your sensitivity to certain flavors diminishes.
Fussy, picky eaters have a more discerning pallet.
Regional preferences, I suppose. In general, I prefer Miracle Whip to mayonnaise. That said, some mayo brands are tolerable while others are too nasty to keep in your mouth.

Does homemade mayo separate like natural peanut butter does? You know the mayo will have a thick layer of oil on top and you have to mix it before using it? I remember trying and failing with homemade oil 30+ years ago and I had to throw it out. Disgusting and nothing like Hallmanns.

That’s what my old roommate used to say as well. Only problem was, was he would eat all the mayo I bought and never eat his miracle whip for 3 years we lived together. And i would get so pissed when i would go to makemy lunch for work a d get stuck witb an empty jar of mayo.
Bob’s Blue Cheese Dressing will change your mind.
Used to go to the local Bobs Drive In in Glendale (since closed) and order the Burger Combo with heavy Blue Cheese.
They gave you a side of it for the Salad and you dipped your French Fries in it. Out of this world good.
Fortunately, they still sell Bobs Dressing at the Grocery Store even though the Restaurants are few and far between.

I’ve tried Dukes; except for having no sugar, it tastes more like miracle whip than most mayonnaise, to me. I think it’s because it has apple cider vinegar in it; hellmans has white vinegar, and a little sugar. My husband likes miracle whip, or its knockoffs. If I’m out of miracle whip, I just use mayo on his sandwiches, and sprinkle a tiny bit of sugar on it. He can’t tell the difference. He doesn’t have my picky taste buds. (But he prefers my cooking to anyone’s, so I must be doing something right.)
