What would happen if a horse threw off its jockey and the riderless horse won the horse-race?

That’s probably true, but then why is a race won “by a nose” referring to the horse’s nose and not the jockey’s nose?

Maybe if the jockey was strong, tall and heavy, he or she would have held on?

Racing jockeys and "strong, tall and heavy" do not go together.

How would this guy even get his pony to the finish line before it collapsed?

It’s a horse race, not a jockey race. Winning by a nose doesn’t have anything to do with the jockey’s nose. Sadly, that’s not the way the rules are written but they should be.

This problem is of course eliminated in dog racing. However without a rider to guide the animal, the animal is more likely to veer off course.

For example, the dog in the gif below decided he'd rather chase a REAL rabbit that had wandered onto the track than that silly old mechanical one the other dogs were chasing...

Riderless racing dogs tent to "showboat" more than horses. Especially when they have a huge lead and about to win easily...

A riderless horse on the track is dangerous to itself and all of the other horses.

What if a NASCA driver fell out of the car approaching the finish line and the car went on to finish first?

A horse race is a horse and Jockey pair. The pair reaches the finish when the first part of the horse,s nose (not leg) and not the jockey or equipment breaks the finish line. If the jockey reaches his whip forward to break the finish line, that does not count.

Not that it matters, but the same is true when humans run the 100 meter race. The body, not the arms or legs of the human counts when breaking the finish line.
