Mayorkas appears to be his real name. It sounds Greek, and he does have a bit of Sephardic-Greek heritage.
According to Wikipedia:
His father, Charles R. "Nicky" Mayorkas, was born in Cuba. He was a Cuban Jew of Sephardi (from the former Ottoman Empire, present-day Turkey and Greece) and Ashkenazi (from Poland) background. He owned and operated a steel wool factory on the outskirts of Havana. Nicky Mayorkas studied economics at Dartmouth College.
His mother, Anita (Gabor), was a Romanian Jew whose family escaped the Holocaust and fled to Cuba in the 1940s. The Cuban Revolution marked the second time his mother would be forced to flee a country she considered home.
It probably won’t be long before one of our new border invaders - from some wonderful jihadi cess pool - proves Majorkas 100% wrong on this point.

It may have some Greek roots, but it’s likely a catenation of “de Mallorca”, which is a not uncommon name in Spain meaning you’re from the island of Mallorca.
It’s really common for both Ashkenazi and Sephardim to take local names rather in the “host country”. Sometimes out of necessity, sometimes just from intermarriage. Conversos did it all the time out of fear of the Catholic authorities 600 years ago, although it seems El Padre doesn’t have much Iberian background.
