I also know this recipe as “mock apple pie.” But did they really have pre-made pie crusts in the 1920s...? (I was pretty much drunk for that entire decade so I don’t remember.)

Shoofly Pie was always one of my favorites.
For most pies, you can make an easy pie crust without shortening:
PAT-IN-THE-PAN PIE CRUST
1-1/3 cups flour
1/2 tsp. salt
1/3 cup vegetable oil
Mix ingredients in bowl.
Then sprinkle with 2 tablespoons water (one tablespoon at a time) while tossing ingredients with fork.
Form pastry into a ball. Then press it into a pie pan.
