Thanks so much. There are some people I know who need to see this. Not a cure-all, but a bit of improvement, in a practical way.
Beef tallow is an excellent fat. I bought fat from a local farmer from his grass fed/finished cows & rendered my own. Most of the time, I like to use ghee ... I make my own. To buy it is very expensive & I can make it for the cost of a pound of butter, plus I know there is nothing but butter in it.
If you start with a pound of butter, how much ghee do you end up with? Do you do anything with the leftover milk solids (or whatever it is)? What is the advantage of ghee over butter?
What the article didn’t tell you but the study did:
Ketogenic Diet Tolerability
Most patients initially experienced one or more symptoms commonly reported during early keto-adaptation such as headache, insomnia, irritability, excitation, dizziness, and carbohydrate cravings. And didn’t require special medical or psychiatric management, and resolved within 2 weeks.
Beyond this initial transition period, the KD was psychiatrically well tolerated by all patients, and 27 of 31 (87%) experienced no problematic somatic side effects. Which meant 13% did which could include suicide attempts which is on the list of somatic side effect.
Two (excluded) patients cited fat intolerance, and 2 (included) patients experienced diarrhea and/or vomiting which resolved within 4 weeks. A fifth patient developed gastroenteritis during week 5 of the intervention and discontinued the diet.
Post-Hospitalization Dietary Adherence
In the months following hospital discharge, 13 of the 28 included patients (46%) reported good adherence to the KD at home, 5 (18%) reported partial adherence. However 21% discontinued the diet the three patients lost to follow-up. That means that more than half of the patients continued the diet consistent with its intent and use.
Wen better than half of the people using the diet discontinued it, it is not a good resume for success. And the success of this study is based upon psychiatric needs far more than dietary so using this for medical benefits is only as good as the use of it by the patients. And in that, as better than half of them discontinued use on their own accord for any reason. I don’t call that a success.

Ain’t that the truth. Got an uncle that would likely improve considerably if he followed the Keto regime for a few months. Considering his “circle” though, doubt he’ll get the memo as they don’t really have his best interests at the forefront.
The bad news is that the mentally ill homeless people in cities like Los Angeles and San Francisco largely cannot afford a Keto diet after purchasing their illicit drugs.
As for the Wagyu tallow, I brush a tiny bit of it on steaks or roasts after I sous vide them, just before I sear them with this:
When I get the chance, I'm going to smoke some of the tallow for increased yumminess.
A pound of butter = about a pint of ghee. I put mine in a pint Ball canning jar & it fills it nicely, but not to the brim. Use UNSALTED butter.
You can throw the milk solids away .... a tablespoon or two is all that is left.
Ghee has a higher smoke point than butter. You can store ghee on the counter for a few months rather than in the fridge.
One caution - if a baking recipe calls for butter, use butter, not ghee.

You can make ghee in a slow cooker (I have never done it that way).
Also, I bought a ceramic coated sauce pan - the coating is white so you can see the milk solids when they fall to the bottom. The darker/more brown they get, the “nuttier” your ghee will taste. I like mine without a heavy ‘nutty’ taste so when my milk solids are a light beige, I stop & strain out the milk solids while pouring into the Ball jar.
Getting a lot better diet than the usual hospital food leads to better physical health and corresponding mood. That, plus a robust Hawthorne Effect would more than account for improvement. Question then would be how long does the effect last. My guess is, not long.

I don’t have a smoker, but my brother next door got one last fall (nice one, too). I am getting half a hog the end of September & I plan on keeping him busy smoking some pork for me. I also want him to smoke some salt - makes nice gifts. Just search ‘smoked salt recipe’ and you’ll come up with a bunch of them.
I used to smoke ribs and pork butts. I started with an ECB (El Cheapo Brinkman) to great success, then moved up a couple notches. Now I have a pellet smoker.
I’ve since moved on to sous vide, because it is so freaking simple to cook meat EXACTLY the way I want it, and I don’t have to babysit the darned thing. Salt, pepper, maybe a rub, stick it in the bag, stick the bag into the vat, and set a timer. Smoking meat is an alligator, devouring my time even worse than this forum.
And the cleanup on sous vide is NOTHING. Rinse the wand and the tub. No more time wasted cleaning out smokers.
BTW, I tried different searing methods, but I’m not skilled enough to not overcook the meat, so I switched to the blow torch. It’s a gazillion BTUs, so the sear occurs very quickly, and meat does not overcook. And I get an excuse to buy a blow torch.
My brother is “new” to smoking so the time involved doesn’t bother him ... yet :-)
