Yep, eggplant too. I’ve done veggie enchiladas more than once - filled with some nice sauteed squash, onion, and peppers as well as rice and beans.
Thank you for the information. Repellant but very germane. So much of what is never told, is purposely hidden, would change the public perception and derail profit or the advance of the liberal agenda.

I do not substitute eggplant for meat.
When I want to eat eggplant I eat eggplant,
when I want to eat meat I eat meat.
Right now if I felt like eating a Philly cheesesteak,
I would undertake the 2 hour drive to the Yellow Submarine
in Maple Shade, New Jersey. But that is way too long a drive
to make just for lunch. Especially since I've got plenty
of turkey, pepperoni and ham in the fridge.

In the past I've made wraps or burritos using Italian roasted peppers, onions,
eggplant, and grated Monterey jack cheese.
Could use mozzarella if no jack is available.
