Chasing the guy down will make a self defense claim invalid. You can hardly claim to be in fear for your life if you go chasing after the guy. Even in Texas

Thieves are not guaranteed a smooth getaway. You are allowed to confront their thievery, and if they are stupid enough to become a threat to you, your rights to self defense do not evaporate.
In Texas you can use deadly force to stop a theft or criminal mischief in the nighttime even if there is no threat involved if it is the only way you think you can stop it

It’s a defense of prosecution in Texas. Upu can’t even steal one dollar from a person. We gave precedents for this in Texas...even in Harris County.

Where I come from you weld up a rack of that cage steel expanding wall, you make the frame about two feet high with angle iron.
Get a log fire going keep it going, you take your pig you stick it on the screen meat side down.
You get a shovel you go over to the log fire and you start bringing shovel fulls of embers to the rack and throw down underneath the pig.
You get a nice bed of coals going under the pig and you refresh those embers as needed from the log fire 10 ft away.
Get a piece of tin roofing (tornado scrap) and you lay it on top of the pig so it captures the heat a bit.
Nobody’s going to steal that, however you might get drunk and start shooting at the shadows late at night while you’re tending the fire, you never know, it might be another wild pig. Or a coyote.

They used to hang horse thieves and cattle rustlers.
Why? Because they were stealing a mans lively hood.
A very good deterrent to Stealing is to harshly punish it. A bad way to handle thieves is to give them a lolly pop and a pat on the head and say " you shouldnt do that, you hurt that persons feelings."
Hang 'em all and let God sort them out.
I have lost most of my sympathy for adults who steal.
