Yes, for hard boiled eggs, I will let the eggs sit in the refrigerator for at least a couple weeks. When they are fresh, they do not peel very well.

Note that I got that idea from a restaurant I worked in many years ago. The fresh eggs would be cracked and used for the grill (i.e. omelettes) but the older eggs would be boiled and sliced/chopped up for salads. Because they peeled easier.

You can get powdered eggs.

I think they probably work just as good, although I admit... we haven’t cracked a can open yet.

I don't go in for the boutique eggs you are thinking of - the ones they sell in the hippie part of town at the farm market with the fancy bows tied around the cartons by some middle-aged woman wearing an Indigo Girls t-shirt.

No, I just grab them from the local farms. Most of the eggs still have the bloom and are even smeared with chicken feces. But that's the way I like them.

It doesn’t even have to be complicated...fall down in your driveway collecting you garbage can from the curb....and detach your quad from your knee cap or fall down a couple of stairs and boom... shattered wrist.

Hit a divet mowing the yard... torn ACL.

Boom. Compound fracture, 4 broken (not cracked) ribs.

And that’s without even trying. Throw in some weather and.... “Jack you dead”

We have about 75 - 80 chickens right now.

They need a regular 16 hours of light. We have lights on timers in our coups to give them regular light all year round.

Production does drop some in the cold weather, but the bigger affect for us is they eat a lot more, and we can’t free range them when there’s snow on the ground. Chickens will not step on snow, even if there is green grass on the other side. Subsequently, our feed costs go up. And because they will not leave the coop, we have to clean it much more often.

So it takes more time a money in the winter, but ours lay about 50 - 60 eggs a day pretty consistently.

There’s no shortage of meat here, but the beef is priced too high to seriously consider buying.

Haven’t seen an egg shortage since the beginning of the pandemic.

There is a cat food shortage, and it’s been going on since last April.
