This cake resembles a fruity (banana and pineapple) version of a spice cake...try it, you'll absolutely love it! Ingredients: 3 cups flour 2 cups sugar 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1 1/2 cup vegetable oil 3 eggs, beaten 1 1/2 tsp. vanilla 1 8 oz. can crushed pineapple (do not drain) 3 chopped bananas 1 cup chopped pecans (optional)

Ingredients: 2 large cans pineapple chunks 3/4 cup sugar 3 tbsp. flour 1 cup shredded cheddar cheese 1/2 stick butter, melted 1 sleeve Ritz crackers

2 ½ cups gluten free puffed rice or corn flakes ¼ cup fine coconut ½ cup slithered almonds ½ cup milk powder 1/3 cup pure icing sugar 1/3 cup currants 1 tablespoon mixed peel (optional if fructose intolerant) 1 tablespoon glazed cherries - chopped ¼ cup dried apricots – chopped 3.38 oz Copha/ Peerless shortening

Ingredients: 2 sticks butter (always a good start!) 1/2 cup cocoa 4 eggs, lightly beaten 2 cups sugar 1 1/2 cups flour 1 1/2 cups chopped pecans (optional) Pinch of salt 1 tsp. vanilla Miniature marshmallows

This dessert gets it's silly name because you basically "dump" all the ingredients in the cake pan together. Very easy and very yummy!

I even bake a bunch of these and freeze them individually in plastic wrap or foil and slip them in the kids' lunch bags right out of the freezer. Sneaks those veggies into an easy and yummy treat.

A sweet treat from the land down under! There are variations of the finished cakes. You can use fruits, yogurts or mock creams.

I am in charge of desserts for my family Thanksgiving dinner.
