"Never liked spinach much."

Stir-fry in olive oil with shaved garlic. Mmm.

Beet greens are amazing cooked that way, served with a nice aioli made from a couple tablespoons mayonnaise, a few tablespoons balsamic, enough olive oil to make it runny, and a pinch of cayenne, and of course the fresh ground pepper. Mmm.

Best thing to do with spinach is to fry 4 slices of bacon, then remove the bacon, crumble it and set it aside for a while.

Throw in a chopped whole hot onion and fry in the bacon grease until lightly golden, toss in three cloves diced garlic, add a half bag or so of frozen spinach, the crumbled bacon, a squirt of lemon and cook until it’s thawed.

Then remove from the heat and mix it with a cup of parmesan cheese, salt and pepper to taste. Then stuff the mixture under the skin of chicken thighs along with a slice of mozzarella cheese for each and put them into a baking pan.

Sprinkle the chicken with whatever seasoning you like or just garlic powder, salt and pepper. Pour in a bit of wine and bake in a preheated oven until done and crispy on top.
