Your town sounds like the right kind of people. I use 5 gallon buckets and a ceramic pizza cooking thingy that’s real heavy clay.It provides an exacting inside fit to the bucket, yet moves freely up and down. It weighs about five pounds and keeps everything under the liquid that builds up. I bought five of them just for this exact purpose. Forget the pizza!
