This will be the 3rd annual Freeper Thanksgiving Recipes thread. We always get such great recipes and ideas for Turkey day. Take one and/or leave one.

Thanks...

My mom used to make something similar using cracker crumbs.

I wasn’t sure whether to mix it in or make a cornbread topping.

Cranberry Margaritas

1 1/4 cup cranberry juice
1/2 cup sugar
1 1/2 cup fresh frozen cranberries, rinsed
3/4 cup fresh squeezed lime juice
3/4 cup tequila
1/2 cup Grand Marnier
ice

Pour half of mixture in the blender and fill rest with ice. Blend. Repeat with second half of mixture. Makes minimum of two blender batches.

Now we're talkin’!

It turned out great. I added whole heads of garlic and some very rough chopped carrots during the roasting. The gravey turned out excellent!

I'm not much for cooking, but I will leave my "Monday after Thanksgiving" recipe:

V-8, skinless chicken breast and green tea. Repeat until you've lost the weight you gained in four days. It was worth it.

Forgot to add the recipe...

Plantation Peanut Soup
Serves 8

Ingredients:

6 cups chicken broth
½ cup celery, chopped
½ teaspoons salt
½ cup onion, chopped
4 tablespoons butter
1 cup peanut butter, chunky
2 cups light cream
½ cup flour
½ cup water
1 cup peanuts, chopped (reserve ½ cup for garnish)

Directions:

Combine all ingredients (except flour and water) in crockpot, cover and cook on Low for 4 hours.

In a separate bowl, combine flour and water and mix into soup, stirring well.

Cook on High for an additional 20-25 minutes to thicken, stirring occasionally.

To serve: Ladle into bowls, garnish each serving with a tablespoon or so of good Bourbon, a dollop of unsweetened whipped cream, a sprinkle of paprika and some chopped peanuts and serve.

Well, now that I am a senior citizen, we decided to cut my work down. My oldest daughter is in charge of the Turkey and dressing. My youngest brings a side dish and dessert. They negotiate the home baked bread.

I buy a canned ham and make the potatoes and veggies that the grand kids like. The ham is simple. I score it on the diagonal and push whole cloves into the intersections.

Then I top with an easy glaze: Dump some mustard, brown sugar, and honey in microwave safe bowl, and heat a few seconds. Stir until sugar is dissolved, then spread on ham. Bake at 350 degrees till ham is finished(about an hr or 1 1/2 hrs).

Italian green beans with a little garlic, onion powder, and fresh ground pepper, and some ham seasoning into the crock-pot for the youngest granddaughter.

Mashed potatoes (homemade or start with Bob Evans for quicker method) for the middle granddaughter. I whip sour cream into the hot mashed potatoes with a hand mixer, and put them into the crock-pot on warm.

The oldest granddaughter likes cheesy potatoes. Since I never know for sure whether she will make it until the last minute, I rely on a box mix of augratin potatoes, but I bake two additional potatoes in the microwave.

Follow the directions for microwave cooking amounts, but after cooking for half the time, put into the crock-pot, add the peeled, sliced baked potatoes, and cook on low.

If the girls forget to bake bread, I whip up a quick beer bread:
3 cups self rising flour
5-7 tablespoons sugar
1 can beer

Stir a little till it is moistened, put into greased loaf pan. Bake at 350 (alongside the ham) for 50 minutes, drizzle melted butter on top and cook an additional 10 minutes.

Every thing is easy. I get the veggies into the crock-pot while I am watching breakfast cook. Basically I am off the hook till I put the ham into the oven(can be prepared the night before).

This keeps my feet and legs from hurting too bad, and everyone enjoys trying their various recipes.

We bring one new recipe/sample dish and exchange recipes at Thanksgiving and Christmas. So the grand-kids get their favorites, the women get to try out new recipes, and no one is exhausted. A happy time for all (smile).

I agree-we fight over this corn casserole.
Last year I doubled the recipe for the same # of people and both were gone in a flash.
Guess it’s all that butter!

My favorite cranberry relish.

Mine is similar...

Follow the directions on the back of the fresh cranberry bags.

1.) Substitute Fresh Orange Juice for the Water.
2.) Add Orange Zest.
3.) Add Cinammon and Nutmeg to taste
4.) While cooking add a Cinammon Stick or two.

But the PIECE DE RESISTANCE is to add a couple of shots of Napolian Brandy...

Oh my, very very happy Cranberry Sauce, it taste really good.

I need to find a link to the Epicurius Turkey recipe with sage leaves stuffed under the skin, but cooking the bird on a bed of onions and the gravy I make from it. ( I modify the recipe and process the unions into the liquid Oh my....)

I also have a cornbread / vegetable casserole with dried fruit that is amazing, adding sausage to it makes it even better...

When I have time I will find links or transcribe them here.

I’ve posted this one the last two T-day threads, so here it is again. This pie is VERY rich!

Rich Chocolate Pecan Pie (From the Food Network)

1 1/2 cups pecans
1 cup semisweet chocolate chips
1 unbaked 9-inch pie shell (deep dish is best)
4 eggs, beaten
1/2 cup sugar
1/2 cup light brown sugar
1/2 cup corn syrup
1/2 teaspoon vanilla extract
Pinch salt
Caramel Sauce, for garnish, recipe follows
Confectioners’ sugar, for garnish

Preheat the oven to 375 degrees F. Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell.

In a mixing bowl, whisk the remaining ingredients together. Pour the filling over the pecans. Bake until the filling sets, 50 to 60 minutes. Remove from the oven and cool for 30 minutes before slicing. Cut into individual servings and serve with a drizzle of Caramel Sauce and sprinkle with confectioners’ sugar.

Caramel Sauce:

3/4 cup sugar
2 tablespoons water
1/2 teaspoon fresh lemon juice
1/2 cup heavy cream
2 tablespoons to 1/4 cup whole milk

Combine the sugar, water, and lemon juice in a medium heavy saucepan and cook over medium-high heat, stirring, until the sugar dissolves. Let boil without stirring until the mixture becomes a deep amber color, 2 to 3 minutes, watching closely so it doesn’t burn. Add the cream (be careful; it will bubble up), whisk to combine, and remove from the heat.

Add 2 tablespoons of the milk, then add up to 2 more tablespoons, until the desired consistency is reached. Let cool until just warm before serving. (The sauce will thicken as it cools.)

If that isn’t sweet enough for you, throw some vanilla ice cream on top too.

Check insulin levels and make dental appt.

My DIL and I were going to go thru my tried and true recipes and post one of them but then she saw the words Cranberry Margaritas. Already had the ingredients in the house so blended up a couple of batches. Best that the recipe posting wait for a bit.
