Not much of a recipe but here is a quick and easy dessert for the Memorial Day weekend.
chocolate ice cream
A & W Cream Soda
whipped cream or whipped dessert topping (optional)
maraschino cherries (optional)
Two or three scoops of ice cream in a glass and fill with cream soda. If desired, garnish with whipped cream and/or cherry.
Albondigas (Mexican meatball) Soup
Saute in olive oil in a large pot:
1 diced white onion
2 bunches green onions, chopped
1-7 oz can chopped green chilies
1 tsp chopped garlic
1 tsp salt
1 tsp cumin
Add 1 large can “fire roasted” broken tomatoes
and 1 quart water to pot and bring to boil.
Mix:
2 pounds lean hamburger
2 eggs
1/2 cup flour
salt, pepper, garlic powder to taste
Form into one-inch balls, added one
at a time to boiling soup.
Turn heat to low and simmer, covered.
Cook 45 minutes, then adjust seasonings.
In honor of National Brisket Day.
My late aunt’s beer brisket.
Simple enough for a clod like me to prepare, and as a bonus, contains my two favorite ingredients.
Chop one onion and a couple of garlic cloves.
Add 2 Tbsp. of brown sugar, 1/2 cup chili sauce and 1 beer.
Mix ingredients well and pour over 3-4 lb. brisket.
Cover tightly and bake at 350 for 3-1/2 hrs.
Uncover and cook for another 1/2 hr.

all I have is sirloin and rib-eye for this week-end..
it’ll have to do.
PUERCO PIBIL (My today’s version - varies everytime I make it.)
Grind together until very fine:
2.5 tbs annatto seeds (should be 5 tbs but I ran out - for color, really.)
1 tsp cumin seeds
1 tbs allspice
1 tbs whole cloves
1 tbs peppercorns
1 tsp oregano
8 pounds pork butt cut up into cubes (throw the bones in, too, and remove them when cooking is complete)
3/4 c orange juice
3/4 c lime juice
3/4 c white vinegar
8 garlic cloves, minced
1 tbs salt
2 bay leaves
1 (ONLY!) habanero pepper, diced (remove the veins and seeds!)
1 onion chopped
BIG splash of Tequila
Throw together in a roasting pan and bake for 4-5 hours at 350 degrees until the meat shreds.
Transfer to dutch oven and keep warm next to campfire at family boatlanding campsite with plenty of buns, beer, and other good foods.
Not sure how mamy it’ll feed but expecting at least ten people will be able to pork out on it.

OK, for National Brisket Day try this one:
Everyone loves it and wants to know how you performed this miracle with brisket
4 lb brisket
2 cloves garlic, minced
1 1/2 tsp salt
1 tsp pepper
2 lb sweet onions, cut in half and sliced crosswise
1/2 C drained marinated dried tomatoes (any drained tomatoes I think will do)
1 C dry red wine
2 T balsamic vinegar
Put the brisket fat side up in a baking pan large enough to hold it. Put everything else over it and cover with 2 layers of tinfoil to seal TIGHTLY. Bake @350 for 4 hours and enjoy. And I do mean enjoy...everyone loves this one.
Love these threads but would like to see a thread for us singles out here. Simple and not a lot of ingredients.
