The plural of Thai is Thai, but yes you are correct, Thai know what to do with them. In fact they raise them in fish farms.

Barbecued snakehead, (aka mudfish,) (Pla Chon, ปลาช่อน,) are a common food item served by steet vendors in Thailand.
