Good afternoon/evening FReepers. Yep, it is Beer Thirty Time Once Again!

Happiness is a bubbling airlock! And a Cold Home Brew

BEER

Good evening/afternoon brewers and winemakers. My wife and I are heading back to Mississippi from our new digs in Texas mid week next week to check on the house and property we own there. There will not be a beer/wine thread next week and possibly the next week. I do have another Honey Ale kit to brew up when I get back to Texas. I have decided not to brew it yet because I want to be here to watch over it.

I hope all of you and your Brews and Wines are doing well. Stop by and share what you are brewing or let us know what your favorite brew, wine or spirit is.

I keep 2 or 3 packs of Safale 05 in the fridge at all times. Just for a just-in-case moment when brewing! So I will be using one of those and a little yeast nutrient in a cider.

That is a pretty strong brew. If not for the black patent and chocolate, it would be very much like a strong Belgian, excepting the yeast.

I do pretty much the same with my Belgians, except I do a partial mash, with about half the fermentables coming from grains. But really, these are certainly not session beers. To me they’re the kind of thing you pop open for a good dinner or a special occasion, or even give as gifts, in a nice Belgian bottle with the cork and wire hood and a clever label.

Wow. You really, really are into it. If I brewed at your level, I’d start a brew-pub.

Thanks for your insights!

Starting a brew pub would take the fun out of it. I love to do it now as I don’t have to do it! If I had to do it it takes away the fun of it. At least that is true for me.
