Of all of the BBQ “Types(KC, Memphis, NC, Texas)” in the United States ir seem to me that NC BBQ is the “Weakest”.

Yep. There is nothing that even comes close to pecan smoked brisket.

Yes, Texas Monthly is a foreign entity in Texas.

It Sucks almost as bad as UT.

Now I'm bummed out.

I'll be spending 2 weeks in August in Raleigh for business and was looking forward to some good BBQ....like the stuff I make. Special 8x3+1 rub on a 5lb rack of spareribs...cooked low and slow.

But from the descriptions of NC BBQ, It sounds...less than spectacular.

One exception is the North Carolina Vinegar Sauce. Hideous and unpalatable not fit for pigs.

Vinegar sauce is pure nasty. Give me a sweet tomato sauce any day.

I like the TX commitment to the smoke and meat whil;e the Carolina use of vinegar and “lo&slo” make for some melt-in-your-mouth results.

In NC they do a great job of slow cooking pork shoulders. All golden brown and crispy and dripping fat and looking absolutely delicious. Then they tear that beautiful hunk of meat to pieces and pour piss all over it. How they have the nerve to call that shredded swine barbecue is beyond me.

I suspect you’ve never eaten NC barbecue. Otherwise you’d know that there are multiple ways it’s served, sliced, pulled, coarse chopped, fine chopped. The sauce is typically served on the side.

Texas seems to be attracting a lower class of people these days.

I love Texas. Texans too, so long as they’re not tearing someone else down to build themselves up. Seems epidemic on this thread. Maybe it’s all the invading Californians.

I live have lived in Charlotte 12 years now.The only decent BBQ I have found is the Brisket at Mac’s Speed Shop on South Blvd. Do you engage in any form of exercise other than jumping to conclusions?

Don’t let all the loudmouth TX partisans put you off, NC style is the basis for all of them, it began here. Like many things, the earlier it is, the simpler it tends to be. Sometimes simpler is better.

Both of these guys are wrong.

The best BBQ in the country can be found wherever my smoker happens to be sitting. The meat is usually pork, and the smoker is usually in Tennessee... :)

But all that being said, any well-prepared BBQ is welcome to me. I love it all!

Here’s a hint...order the ribs if you don’t like the pulled pork. Even with the pulled pork I don’t know of any place around here that would poor anything over it. You choose to poor or not and can choose from at least two styles. Personally I don’t like the sweet styles but YMMV.

It’s well-regarded, they’ve won any number of high profile barbecue cool-offs around the country. A little fancy as far as NC ‘cue joints go but they do a nice job.
