In NC they do a great job of slow cooking pork shoulders. All golden brown and crispy and dripping fat and looking absolutely delicious. Then they tear that beautiful hunk of meat to pieces and pour piss all over it. How they have the nerve to call that shredded swine barbecue is beyond me.
I suspect you’ve never eaten NC barbecue. Otherwise you’d know that there are multiple ways it’s served, sliced, pulled, coarse chopped, fine chopped. The sauce is typically served on the side.
Texas seems to be attracting a lower class of people these days.
Here’s a hint...order the ribs if you don’t like the pulled pork. Even with the pulled pork I don’t know of any place around here that would poor anything over it. You choose to poor or not and can choose from at least two styles. Personally I don’t like the sweet styles but YMMV.
