Corned beef has gone from $8-10, to 17-23 in the last two years.
As much as we like it, we just don’t buy it anymore.

We stopped buying beef because we won’t pay the price they are asking. We can get pork at a better price. Beef it’s for very special occasions only any more.

Here in Seattle one can buy lard over in the cooking supplies. It is great for frying and is shelf stable so good to keep in pantry for emergencies. Also Velveeta, of cours, also shelf stable.
I keep the four pound buckets of lard in the pantry, but I keep about a cup in the fridge for biscuits, piecrusts and other pastries that call for chilled lard.
Purely economics... smallest beef herds in decades, prices beyond high... Low end 73% lean TUBE beef is over $3 a lb in most markets, let alone something that isn’t pure crap...
When beef prices fall, you will see it switch back
I also buy whole loins on sale at Fareway for $2/lb or lower, then have it cut into 3 roasts, approximately 2.5 to 3 lbs each. One easy fix is take a 3 lb cut, put in slow cooker. Mix 1 can of cream of mushroom soup, about a half can of water, and one packet of dried onion soup mix. Stir this to smooth, pour over roast, cover and cook all day. YUM.
Since pork is getting cheaper than beef, and 0.00boogaloo has cut military spending, doesn’t it make cents for the military to feed the Gitmo prisoners pork? ;>O

That is why I mentioned “overseas demand”. I personally don’t believe a that American demand for beef is driving the price increase due to the healthy eating craze. American food processors used to throw out chicken feet but the rise of Asian purchasing power and the fact that Asians consider chicken feet a delicacy means that it is one of the more profitable products we export. I was also assuming market forces driving the cost of fuel.
I explicitly called out the wasteful government mandate for corn to ethanol for fuel assuming people would understand that diverting some corn to fuel would drive up the cost of feed for feedlots which would then be passed onto the consumer. I should have fleshed that one out.
I finally understand why a mortgage company opened up a office beside the grocery meat counter.
One cannot be a real American if that person is not Jewish unless he or she eats ham, bacon, pork chops, etc. Think of all the A-holes we can get rid of by such a rule—the followers of MoHAMmed, the Vegans, and other nut cases.
