Since airliners almost always fly above the weather these seat would always be in the sunshine. Unbearable heat and sunburn would be issues (spoken as one who flies under a canopy - and uses a retractable shade).

Canopies aren't made of glass.

If such a thing were available for plastic canopies, we'd have it.
Canopies can be tinted, but it cuts down on the view like dark sunglasses...
