Might work or not. Starbucks basically said FU to the anti gay marriage people: “We don’t want your business”. A lot can depend on what the shareholders have to say about it (not much, with Starbucks).

You do have to pick your target based on their vulnerability, and that would depend on their consumer profile.
Starbucks might not be your best bet.
Target --- much more mainstream profile. Therefore if we open up Alinsky tactics on all fronts, we can kick the stuffing out of them.
