It's not Chevy's Fresh Mex (the chain with 37 locations) that is the subject of this article, it's Tijuana Flats in Florida. According to the article, Tijuana Flats declared Chapter 11 bankruptcy and sold 11 of its locations in Florida to Flatheads LLC.
BTW, I used to go to Chevy's a lot when I lived in California. IMHO, Chevy's Fresh Mex was modeled after Papacito's in Texas, not Taco Bell.

Ah yes, Tijuana Flats (Moline, IL. Now Los Agavos), site of my second date with future wife (Oct. 77). I had only known her 8 days and this corvette-driving single guy was already hopelessly falling for her.
The TF there was a more classy sit-down-and-be-waited-on diner, people dressed snazzier. A local chain, Taco John’s, was much like Taco Bell.
Oops, the TF I referred to must have been totally unrelated to the chain in the story founded in 95.
Moline Illinois’ Tijuana Flats must have been a one-off local venture (built around 1972?). It was in the classic low ceiling/tile roof/arched stucco walls design. Definitely not a fast-food restaurant, with the help dressed in a comparable fashion.
I only read the blurb and it never mentioned the company going bankrupt. Typical MSM article.
