The Apple Jack I made over Thanksgiving is mellowing nicely. Another month and it should be nice and smooth.
The mead I bottled last year is nearly gone. I don't know what's happening to it. It just seems to evaporate or something. Maybe it's space aliens coming into the house late at night, or they're sucking it into wormholes or something.
It doesn't help that I let a few close friends try it. Now every time they come over it's "Hey, got any more of that mead stuff left?" I should probably lie and say 'no' but it's just too darn good.
Any excuse to pop the cork is alright with me!
Gotta be careful with it though. The ABV is around 14% so it does pack a bit of a punch.

A good mead is addictive as hell......... It goes way too fast. I've only made it once and it was sweet.
I like the procrastinator bock recipe.... I make it a couple times a year. Here's a link for it. I buy mine locally but they don't have a web site.
