½ cup brown rice cooked and drained 500g/1lb orange sweet potato peeled, diced and cooked 2 tablespoons fresh parsley chopped 400g/13oz can red salmon in brine drained 3 spring onions/scallions finely sliced 3 tablespoons sunflower seeds 2 tablespoons almond meal 1 ½ cups gluten free corn flakes - crushed Salt and pepper Olive oil spray

My culinary treat for this weekend will be chicken-fried bacon.
Several strips of extra-thick-sliced bacon
Light tempura batter
White cream gravy
Dip the bacon slices in batter, then deep-fry at 350 degrees. Then dip the hot fluffy bacon in cream gravy. Eat.

Chicken-fried bacon is awesome. In fact, chicken-fried anything gets my attention in a hurry.

We like salmon patties and sweet potatoes. Although creative in cooking, I never thought to marry the two. Sounds really tasty.

I am from Michigan. I am on a national BBQ forum. I have learned that people in the south will throw a sweet potato on the grill much like we would do an Idaho potato. So I do that now once in a while. It is fun learning from others.

I have not had canned salmon in years. I have enjoyed it while it was still warm an just sealed in the can.
I eat wild salmon only. Farmed is OK, but, if you put it side by side with wild sockeye or king salmon you will immediately see and taste the difference.
I will give this recipe a try

I usually make salmon cakes and make a side of baked sweet potato “fries”. It’ll be fun to marry the two.
