Ingredients:
1 large eggplant
3/4 c. extra virgin olive oil
1 14.5 oz. can diced tomatoes
1 8 oz. can tomato sauce
1/2 tsp. basil
1/2 tsp. oregano
1 tbsp. minced garlic
1/4 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
3 eggs
2 cups Italian seasoned bread crumbs

The salting and draining are a must for authentic Italian version. Real Italians do not use oragano.
Maybe it depends on the region. We used to use it, although not in eggplant parmigian as I remember it, it’s true.

In OUR ITALIAN house we use LOTS of Oregano.

My mom was an eggplant fanatic. While home on leave right before I left for Vietnam, she asked me one evening what I would like for supper. I told her a thick juicy hamburger.She made it and was so proud of her creation that I didn’t have the heart or nerve to express my shock & displeasure. Because right there between the burger & bun was a 1/2” slice of eggplant. I can honestly say that for 30 years I never touched an eggplant again until I started raising them in my garden.
And guess what?
They are still as tasteless as I remember them. LOL
