Replace the mushroom soup with cream of celery
toss over some egg noodles and bake for 30 and you got a nice casserole
start with COOKED chicken breast cut into chunks
Add in a small handful of fresh celery cut into 1/4 inch pieces too
and maybe some cubed carrots and peas
mmmmmmmmmmmmm

It’s not that much harder to cook for real.
Try taking those chicken breasts, putting them in the crockpot with some salt, pepper and some finely diced onions and celery. Cook them for the 4-6 hours, then drain the liquid.
Take about a half a stick of butter and melt it. Throw in some sliced mushrooms and cook until wilted. Then add some flour over the top of that and a bit more butter if the mushrooms soaked up too much. Cook the flour until it’s lightly browned. Add back the liquid you drained from the chicken. Stir in some milk and shredded cheddar cheese.
Serve over rice or wide noodles.
It’s a little more effort, but really not much and it will be a vastly superior result.
Oh, adding a bit of sherry to the mushrooms while they’re cooking will give the whole dish a more sophisticated flavor.

You can add red potatoes, cut into small pieces, or just steam the potatoes and serve them on the side.
It was my experience as a single father for a number of years, that some of the best food I made for the boy and I came from some recipe books I got for free from Campbells.
The ingredients were easy to find, the recipes were a snap to prepare and quick to cook.
When I got married, the books mysteriously disappeared. Mrs. Liberty is way too good in the kitchen...
