And he wasn’t bitten? I can hardly believe this that this person trying to pry them apart was not bitten because they are locked. And if you pry them apart; it is very painful for both.

No, nor was the boy, apparently. No sign of claw marks or anything on the boy.

The article is mute on whether Cadillo was bitten

And if you pry them apart; it is very painful for both.

Yeah, It probably contributed to the kid's injuries. Still, how could one not try to pry them apart?

I think you are mistaken here. I’ve startled dogs mating before. In their attempt to flee from me, they force themselves to separate...all the while yipping and crying from the pain. No one or anything was bitten. They run away. I could see a dog fearful of discipline not attacking. THat is assuming this crazy story is true. I personally suspect is is not.

The Principle of Occam's Razor states that, "All things being equal, the simplest solution tends to be the best one."

While it is possible that a baby could have innocently been left alone and unclothed with this dog and it would have of it's own volition begun to attack this baby within a short time in such a way as to leave serious injuries requiring reconstructive surgery.

What is more likely is that some human abuser did the deed and when the baby's injuries were too severe to ignore, fabricated the dog story to explain said suspicous injuries to a medical professional.
