Mango mouse sounds deelish. Do you skin ‘em first, or just toss ‘em in a blender, hair, guts, and all? You really must share the recipe. :-))
We had the ‘real deal’ on the “Sea Trek ‘97” cruise, and loved it.
My wife fiddled around later, and came up with a faux version that she calls “mangled mooose’.
Peal & deseed your ripe mango(s) and put in a blender to puree; fold the puree into “extra creamy” Kool Whip; refrigerate to allow it to set.
They also served a cold mango soup.
