Handrolls are popular in California. You probably don’t see those as much in Florida. You also don’t need to eat cut rolls with chopsticks. You can eat them with your fingers and as a snack if you wish. Technically, sushi does not refer to the rolls, but refers to a meal that includes a sour or pickled component, such as cucumber or seafood in vinegar or pickled ginger.
