My hubby and son will be glued to the TV on New Year's Day watching the traditional football marathon. Here are recipes for two of their favorite foods that are quick and fairly easy to prepare:
Chili-cheese hashbrowns
- 1 large bag of frozen hash browns
- 2 or 3 cans of chili (my guys prefer the no-bean variety)
- 1 or 2 cans of chopped green chili peppers
- Lots of shredded cheddar cheese
- Sour cream
- Vegetable oil for cooking hashbrowns
- Tortilla chips (optional)
Prepare frozen hashbrowns according to package instructions (I like to use a big wok). While the hashbrowns are cooking, pour canned chili into a large enough sauce pan along with the chopped green peppers, cover and simmer gently.
When the hashbrowns are done, place them on a large platter. Pour chili over the hashbrowns, top with shredded cheddar cheese and sour cream. Serve with tortilla chips if desired.
Special Baked Hot Wings
- 2 1/2 lbs of raw chicken wings
- 2/3 c hot pepper sauce (NOT Tabasco - I use Frank's Red Hot sauce)
- 1/2 c melted butter or margarine (butter clings to the wings better)
- Several drops of green Tabasco sauce
- Blue cheese salad dressing
Brush wings with vegetable oil and bake at 425-degrees for 1 hour or until done to your taste. Mix hot pepper sauce, melted butter, and green Tabasco sauce in a small bowl. Dip baked chicken wings in the hot sauce mixture and arrange on a platter. Serve with blue cheese salad dressing and lots of napkins.

Along with the hashbrowns and hot wings, I often serve deviled eggs and a fresh veggie tray.

Slice some ham and pile it on biscuits. I prefer buttermilk buscuits but sometimes use sweet potato biscuits (store bought). Sometimes I put mustard on the biscuits. I think it’s a southern thing.

Not from Gourmet magazine, but delicious:
Two large bricks of Philadelphia cream cheese
One can each, cream of chicken and cream of mushroom soup
One small can green chile, preferably Hatch, hotter the better
About 24 oz of chicken, either canned or cooked and cubed
Dash of Worcestershire sauce
Put in crockpot when you get up in the morning and allow to melt together, stirring occasionally
Good as dip, and awfully good on noodles

1 lb your favorite ground sausage
1LB Velveeta cheese
8oz Rotel
Favorite dipping chip
Brown sausage, drain set aside. Melt cheese on low heat, stir in sausage and Rotel. Simmer for about 20 min.
So easy even a gov_bean_ counter can do it.

This is also good made with chorizo instead of regular sausage. I use Chihuahua cheese.
