We love our smoked ham hocks and 15 bean soup. Our local butcher vacuum seals his smoked ham hocks. I keep at least 3 in the freezer at all times. I figure if the power goes they will last the longest.

“Better than Bullion” makes a ham base that is in a glass jar. I’ve used it when I can’t find a ham hock at the store. Find it in your soup and broth aisle.
Don’t really know what would happen to it if not refrigerated, though.
Also, if you have a pressure canner, when pork goes on sale, cook it and then pressure can it yourself.

Yes, there’s canned pork. Canned hams in various sizes, Spam, canned bacon, and Vienna sausages are just some examples.

You can home-can bacon for that.
I buy the packages of ends and pieces, chop them up even smaller, fry it all, then divvy into 1/2 quart jars, cover with hot water, wipe the rim of the jar carefully with vinegar (don’t want grease on there), put on the lids and run them through the pressure cooker.
Adding one to a pot of beans is perfect.

Have you ever tryed Orrington Farms Broth Based Seasoning-ham flavored? Sometimes I have used a spoonful of that and some canned turkey or seasoning when I didn’t have ham hocks.
