Now that sounds like a great breakfast! Bonus points for the Mimosa ;-) Anyone including a snort with breakfast is A-OK in my book!
PS....Guessing it’s Pancake Day all day, so you still have time to celebrate (if you can stomach two food comas in 24 hrs)
Dinner here is more pancakes, dippy eggs and roast beef hash/w gravy...to be washed down with a case of snow-chilled Yuengling...

Smoked salmon (or leftover fresh) makes a great omelet; just use about 4 oz. per person. BTW, the smoked stuff ain’t cheap, about $20.00 per lb. at Kroger’s.
First time I had smoked salmon was in Canmore, AB years ago.
Had it again when we moved to Pittsburgh last summer... something was seriously lost in the translation.
At $20.00 per lb, I hope it’s good!
“National Pancake Day”, being celebrated today, was invented by IHOP in 2005.
For hundreds of years, Christians have celebrated Shrove Tuesday (Pancake Day) as the Tuesday in the seventh week before Easter, which is February 12th this year. February 12th is also celebrated as International Pancake Day by the rest of the world.
One has to wonder why an American California corporation would make such an effort to overshadow an historically Christian holiday.
